I have made this recipe several times and shared it here because they are so good! Right now apples are at a great price at the local grocery stores so, I want to take advantage of the Michigan local grown apple harvest. This recipe also freezes nicely so, make up a couple of batches!
Apple Pie Muffins
First, I have to give my mom credit for the recipe. I don't know where she found it but, I am glad she did. I LOVE these muffins! They are just perfect. Not too sweet.
Apple Pie Muffins (makes about 2 dozen if you use cupcake tins)Preheat oven to 350 degrees
Prep muffin tins (either use paper cups or spray)
Ingredients:
1/2 cup softened butter
1 cup of sugar
1/4 cup buttermilk or sour milk
2 tsp. baking powder
2 eggs
1 tsp vanilla
2 cups flour
1/2 tsp. salt
2 cups shredded apples (about 4 medium sized ones)
1 cup chopped walnuts (or pecans)
1/2 cup raisins
1 tsp. apple pie spice (or pumpkin pie spice)
1 cup of sugar
1/4 cup buttermilk or sour milk
2 tsp. baking powder
2 eggs
1 tsp vanilla
2 cups flour
1/2 tsp. salt
2 cups shredded apples (about 4 medium sized ones)
1 cup chopped walnuts (or pecans)
1/2 cup raisins
1 tsp. apple pie spice (or pumpkin pie spice)
Topping:
1 cup brown sugar
6 T flour
4 T soft butter
2/3 cup chopped nuts
In large bowl beat butter, sugar, buttermilk, eggs and vanilla until smooth
In different bowl, mix the flour, salt and apple pie spice
Slowly mix both bowls together.
Stir in raisins, apples and nuts.
Spoon into muffin tins about 2/3 full
Add 1 T of the topping mix to each muffin.
Bake 55-60 minutes.
