Easy Sloppy Joe Casserole Recipe

Hi everyone!
Okay, cooler weather is here and now I want some dinners that are quick, easy, basically one pan type dishes. Also, I want the smell of something yummy cooking in the oven! Oh, and thrifty!
But then again, these days it feels like you have to take out a small loan for hamburger! Can you believe the price?! There have been several times it was cheaper to buy steak and ground it up myself. So sad! I better stop talking about this subject otherwise this post will be a big ‘ol rant!
Anyway, this is a great way to stretch just one pound of hamburger!

Here is one of my favorite quick casseroles.
Sloppy Joe Casserole
1 pound hamburger cooked, crumbled and drained
1 can of red kidney beans, drained
1 package of sloppy joe seasoning
1/4 teaspoon garlic powder
3 tablespoons ketchup
1/2-1 full cup shredded cheddar
1/2 cup Bisquick
1 cup milk
2 eggs
Preheat oven to 400 degrees
Lightly spray a 9" cooking dish. Cook first 5 ingredients in a pan. Once all cooked, spread this meat mixture into your baking pan. Sprinkle top with shredded cheddar. In a mixing bowl combine bisquick, milk and eggs. Once completely mixed together, drizzle over top of shredded cheese. Bake for 25-30 minutes. You can top with some ketchup or more cheese.
Here it is...yum!

This dish freezes pretty good so, when I make this I freeze individual servings for future dinners plus for Troy to take on the road with him.
I love having my own homemade frozen dinners are ready for a quick meal!

  1. This is my type of meal! Love the easy freezing. Do you freeze it after cooking and then just heat up portions?

    1. I do cook it first Linda and then freeze it. I like to cut it into individual servings and freeze.

  3. This does look delicious. I must get ground beef in large pack and freeze in 1 lb. portions to use. ; Bisquick, a pantry staple. Good idea to freeze individual portions on same day it is made, so will have a fresh meal when want to.
