Chimichurri Pork Salad

Hi everyone!

For dinner the other night I had one of those, “Hum, okay, I have this, this and this to make dinner with. What can I make?” kind of days.

What I had to work with was a package of 2 small pork loins. Normally they would be cut up and added to some kind of noodle or rice dish. That is how I stretch a small amount of meat for the three of us. But, none of us wanted any kind of hot dish because we had been sweating all day and really wanted something filling but cold.

I had just made up some chimichurri sauce and thought I would marinate the pork in some of that and cook them in the oven.

Chimichurri Sauce:

  • 1 cup loosely packed parsley leaves
  • 1 cup loosely packed cilantro leaves
  • 1/4 cup onion, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon vinegar 
  • 1 tablespoon fresh basil
  • 1 tablespoon fresh oregano
  • 1 tablespoon fresh thyme 
  • 2 cloves garlic 
  • 1/8 teaspoon cayenne powder
  • pinch of salt
  • pinch of black pepper

Combine all the above ingredients in a food processor until smooth.

Once the pork loins were cooked, I let them cool down.

On a plate I placed tortilla chips, shredded lettuce, shredded cheese, chopped avocado and chopped green onions. Then I sliced the cooled pork and placed it on top of the other salad fixings. I topped with fresh homemade salsa, chimichurri sauce and some sour cream.

recipe 114Troy and I loved it. It is very filling and delish! I could only eat 1/3 of my salad though. It just filled me up fast. But, it was a nice fresh and cool summer time dinner. Not too mention, it really stretched 2 very small pork loins.
