Sugar Free Layered Coconut Cream Cheesecake

Hi everyone!

Yup, another sugar free dessert recipe! You are going to see a lot of these kinds of recipes from me. We are really trying to cut back big time on sugar in this house so, I have been experimenting a lot!

I made this for Easter and EVERYBODY loved it and kept saying, “Are your sure you didn’t add any sugar?” Nope, none.

What is really nice about this recipe is, you can change out the coconut (and vanilla pudding) and turn it easily into a sugar free chocolate cream cheesecake or, what I am trying next, lemon cream cheesecake.

Ingredients:

Crust:

1 package of sugar free shortbread cookies (crushed fine)

6 teaspoons of softened butter

Combine above and press into your pan.

Cheesecake layer:

1 8 oz block of cream cheese (softened)

2 tablespoons of Splenda (or generic)

1 cup of sugar free Cool Whip

Mix cream cheese and Splenda until blended. Fold in Cool Whip. Spread this on top of pie crust.

Coconut Layer:

2 packages of sugar free vanilla pudding

2/3 cup of flaked coconut

1 1/2 cups of cold milk

The remainder of the Cool Whip tub

Pour milk into a bowl, add 2 packages of vanilla pudding. Use hand mixer and mix well. By hand, stir in coconut and then fold in Cool Whip. Spread over cheese cake layer.

recipes 072Sprinkle top with some toasted coconut and refrigerate for 3-4 hours before serving.

  7. It's always nice to have good sugar-free recipes for when we have people over who are on restricted diets.
    I particularly like the fact that this recipe allows for alot of variation in flavor combinations. Thanks!

  9. I like trying low-sugar recipes too. In fact, I hardly ever use the amount of sugar called for in recipes. I usually cut the content in half and haven't noticed a difference. I like this recipe because of all the possible variations as well as no sugar.
