Well, we had a ton of things to get done this morning so, that means I needed to get something going in the crockpot early. I am sure this is what a lot of you do as well, I checked the fridge and looked for the past weeks leftovers. That is how I generally make soups. Unless there is specific recipe I want to try, my soups are based on leftovers and what I have on hand.
Earlier this week Troy had made Reuben Sandwiches for dinner. Yum! So, that meant we had left over sauerkraut and corned beef in the fridge. We also had a half a bag of hashbrowns. So, that’s where I started my soup.
Ingredients:
2 cans chicken broth
2 1/2 cups of sauerkraut AND the juice
2 cups of chopped up corned beef
4 cups of water
1 cup of apple cider vinegar
2 cups of shredded hash browns
Seasons to taste
This is what I used:
1 Tbs black pepper
1 Tbs onion powder
1 tsp garlic powder
1 tsp caraway seeds
Crockpot on high
Add all the above ingredients into the crock pot. Stir and cook for about 2 hours.
And I topped the soup for each person with pumpernickel bread and Swiss cheese. Kind of a combo between French Onion Soup and Reuben's.
Topping:
pumpernickel bread
Olive oil
Swiss cheese
Cut bread about a 1/2" thick and as large as you want. Since I knew I was going to use these crocks, I cut the bread to fit them. Brush olive oil on booth sides. Place bread on cookie sheet and put into a 450 degree oven. Bake 10 minutes. Ovens vary so, just watch the bread. You want it toasted but not burnt.
Ladle soup into crock, leave plenty of room for bread and cheese. Place a slice of toasted bread on top of soup. Then add cheese on top of that. Place crocks on the cookie sheet and back into the 450 oven for 10 minutes or until cheese melts and is bubbly.
I went out and cut some chives to add to the soup.
Don’t forget extra bread for soppin’! This soup is quite tangy, which I love. I just thought I would tell you that ahead of time!
A simple table setting for two. Homemade soup and a good movie makes for a relaxing rainy afternoon!
Retro Mikasa plates. I love this green design. My mom picked these up for me at a yard sale last weekend.
I picked up a set of these pale green dessert plates at the Christmas Tree Shops for .59 cents each (clearance).
I love these pretty bright floral painted glasses. They were also purchased at CTS clearance $1.00 each. Can you tell I was trying to create a “sunshiny” table because I though it might bring on the sun instead of all the rain!
We need some butter for our bread and these little butter dishes are perfect. Also from CTS.
Nothing real elaborate. Just a rainy day soup lunch. You can tell by my recent tablescapes, we have had a LOT of rain and very few sunny days. I know there are rain dances, are there any SUN dances?

I am home sick with bronchitis, so I need soup. I will be adding these ingredients to my list to have on hand for the future. I didn't even have a can of soup in the cupboard and am to darn sick to venture out today. Going to have to settle for a grilled cheese today.

ReplyDeleteHey Diann! I loved your childhood memory...I LOVE lilacs! I bet you opened your window when they bloomed too so that lovely fragrance could come into your room!
