Stuffed Granny Smith Apples

Hi everyone!

Yesterday I showed you our Thanksgiving day table and dinner. Today I thought I would share our stuffing with you.

This was the first time I tried this and we have decided it won't be the last!

I have read many recipes for stuffed apples and for the most part, a lot of them had things in that I really didn't like. So, I decided to just create my own.

The Fixin's
1 box stuffing mix (yup, major cheat)
5 Granny Smith apples
1/2 cup chopped walnuts
1/2 cup dried cranberries
1/2 a stick of butter
1 cup of chicken stock
1/2 cup of apple juice

Slice off the top of the apples and then get the core out. Start scooping out the apples to create a little bowl. I used a melon baller to do the scooping. The apple flesh will get chopped up and added to the stuffing mixture.

Melt half of your butter and add to stuffing mix. Stir in the chopped apples, walnuts, cranberries and chicken stock. Stuff each apple. Put the leftover stuffing in the bottom of your baking dish (this helps create a nice place to snuggle your apples down into to hold them upright). Place your apples on top of the stuffing. Pour apple juice over everything. Then cut the rest of your butter into little butter chunks to be placed on top of each apple.

Cover with aluminum foil and place in a 375 oven. Bake for about 15 minutes then remove aluminum foil and let the top brown a little.

They turned out really nice and it was a pretty presentation for the stuffing course.

  12. I love the idea of apples. I'll bet that really kept the moisture in, whereas those muffin pans usually just yield dry clumps.
