Revisited post~ Apple Pie Muffins

Hi everyone!

I pulled this recipe up from a post I did last year because I got a bag of apples from the Farmer's Market and decided I wanted to make the Apple Pie Muffins. They are just fantastic! So, I decided to revisit it and share it with all of you for Sunday's Favorites, Seasonal Sundays and Showcase Party. Enjoy!

Apple Pie Muffins


Yesterday in my "Blue & Mosaic Monday" post I featured my cheese dome and I had a few Apple Pie Muffins in the picture. I said I would post the recipe today. And that's what I am doing. First, I have to give my mom credit for the recipe. I don't know where she found it but, I am glad she did. I LOVE these muffins! They are just perfect. Not too sweet.

Apple Pie Muffins (makes about 2 dozen if you use cupcake tins)

Ingredients:

1/2 cup softened butter
1 cup of sugar
1/4 cup buttermilk or sour milk
2 tsp. baking powder
2 eggs
1 tsp vanilla
2 cups flour
1/2 tsp. salt
2 cups shredded apples (about 4 medium sized ones)
1 cup chopped walnuts (or pecans)
1/2 cup raisins
1 tsp. apple pie spice (or pumpkin pie spice)

Topping:
1 cup brown sugar
6 T flour
4 T soft butter
2/3 cup chopped nuts


Preheat oven to 350 degrees

1) prep muffin tins (either use paper cups or spray)

2) In large bowl beat butter, sugar, buttermilk, eggs ans vanilla until smooth

3) In different bowl, mix the flour, salt and apple pie spice

4.) Slowly mix both bowls together.

5) Stir in raisins, apples and nuts.

6) Spoon into muffin tins about 2/3 full

7) Add 1 T of the topping mix to each muffin.

Bake 55-60 minutes.

  4. I like that blue cheese dome! The recipe looks great...and there is nothing more "convenient" than dessert in cupcake style...even an apple pie!

    Mmmm...now I'm thinking that having one of your apple pie muffins would be the perfect way to start my day! They look delicious, Diann!
