It's just a "Leftover" kind of day

Do you have leftover night at your home? I know a lot of people who don't do leftovers. Unless I cook an extra meal to freeze, I try not to have leftovers. But, from time to time it happens.

When my mom cooks at the cabin, she still cooks for a small army. She loves to cook. And she still has the mentally of how she grew up which is, you always had extra in case someone stopped by. My grandma was like that and that is where she gets it from. This is a sneak look into our leftover night while at the cabin.

And sliced tomatoes are on all meal tables! Breakfast, lunch and dinner throughout the growing season! It's just a naturally thing. Do, you have things like that? Something that is always on your meal table? For me, it seems to be applesauce. For some reason, almost every meal I make, I have a small dish of applesauce at each setting. Don't get me wrong, I still have sliced tomatoes and usually cucumbers at every dinner table as well during the summer. I just have to take advantage of them while they are in season.

Nothing fancy or schmancy. Everything from paper plates to old Pyrex. Just good food!

Hope you all have a great weekend!

  1. I find it hard to cook for just two so we end up having leftovers. We use them up though, nothing goes to waste. Love the red and white checked tablecloth.

  3. Some website I read uses the acronym CORN - clean out refrigerator night - I do try to do that once a week, the day before trash pick up.

  9. Diann, I covet a piece of that home-fried chicken! Mmmmmm! When I make chicken, I usually bake it but fried tastes better. We have been eating lots of tomatoes (not for breakfast though). There is nothing we have on the table at every meal but, funny thing, as a child my mom always had applesauce for supper. It was homemade applesauce - is yours? I do love apples! We've been enjoying Jonathans lately and I can't wait for the Honeycrisps!

  10. I love leftovers too. Now that there is just the two of us I often cook too much. That can be a good thing because we don't mind leftovers. We usually eat them for lunch. Occasionally I'll have a lot of leftovers. When that happens we have one big meal and I call it Buffet Night.

  11. WE ALL LOVE LEFTOVERS - EVEN THE BIG KIDS COME HOME AND CHECK THE FRIDGE TO SEE WHAT LEFTOVERS WE HAVE. HAD BROASTED POTATOES LAST NIGHT AND FRIED THE LEFTOVERS WITH EGGS THIS MORNING. SPAGHETTI ON THE SECOND DAY IS THE BEST! OFTEN FOUGHT OVER AT OUR HOUSE :)

  12. I don't mind eating left overs with some things. It sounds like your mom grew up like I did. My mom always cooked extra just in case someone stopped by.
Also , on Sundays we always had two or three meats, several vegetables and casseroles because you never knew who we would have for company.

  15. If I make a casserole, stew or a roast, then we always have leftovers. We love them. I especially like a day that I don't have to cook. Everything looks fabulous. Hugs, Marty

  16. Leftovers? Girlfriend, that is like having money in the bank. I love them. When my kids were little, I know I NEVER threw anything with sauce, pasta or meatballs. I have known people who throw away leftovers and I think that is crazy. This couple would toss shrimp, steak, whatever was left from a meal. The best thing was to be there at the end of dinner to clean up.
We never had something on the table every meal...the tomatoes and cukes sound great.

  17. Some things are ALWAYS better the next day or so.

We love tomatoes and cucumbers. In fact, last night we had hamburger patties, sliced cucumbers and pea salad. First time I ever decided to just make hamburger patties and not eat them with the bun and toppings.

My mom always had heated applesauce with cinnamon in it on the table, and that's the way my kids like it.

  18. We've learned to cook for two, but still have leftovers because someone's eyes were bigger than their stomach!!! But then, we will save it, OR give it to the laying hens! So, no waste here in the woods!

  22. We have tomatoes and cucumbers on our table all through summer as well-the same as my grandmother did too! I'm happy to keep tasty traditions like this! I love leftovers...my husband just deals with it.

  23. I don't often have left-overs but if I do, it's something I eat for lunch the next day when husband and kids are at work and school.

My in-laws have buttered bread with every meal (except in the mornings it's toast), but I don't have anything we always have on the table.

  25. Sorry I didn't get here sooner; I've been out of town since Friday morning.

I often have leftovers too -- I love that end of the week meal when I have a little bit of this and a little bit of that and dinner consists of several small dishes.
