Want a Little Thrifty Snack?



I love fresh Pico De Gallo! I like salsa but, fresh Pico De Gallo is my favorite. We can up tomatoes in the summer but, I don't make can salsa because I prefer it fresh. And this is such a flexible snack to make. use what you have on hand.

My basic recipe is:

chopped roma tomatoes
chopped small onion
chopped garlic clove
some fresh cilantro when I have it
a couple of tablespoons of lime juice
salt and pepper to taste.

That's it. Super simple and delish! It is best to let it sit for about an hour to marinate all the flavors.

Here are other things I add. When i have just a little of this and that left over in the fridge, I chop and add it to the Pico.

Examples:
chopped cucumber
chopped bell peppers
lemon juice (if I don't have lime just handy)
chopped pepper rings
chopped jalapenos
crushed red pepper flakes
chopped olives

Pretty much any little left over veggies. You know how you will end up with a 1/4 of a green pepper or a 3rd of an onion left. This is a great snack to use up all those little bits and not let them sit in your fridge and get pushed to the back and discover a month from now....oh wait, that was my scenario. LOL

I also love to put a twist on it and add a little canned pineapple, Mandarin oranges, or even peaches chopped up in it. And the juice from these canned fruits are great to add to it to change up the taste!

Since we are all tight on money these days, I am really focusing on using up all the food we cook. But, also creating tasty and fun dishes!

So, give this a try and use up your leftovers!

And remember, you don't have to have tortilla chips to enjoy this. Crackers are fine, green pepper slices, cucumber slices, toast points....the possibilities are endless!
