Menu Plan Monday

This week is going to be another "cooking out of the pantry" week. With the exception of a few fresh veggies and fruits, I plan to not buy any groceries for this weeks menu.
So, after shopping in my pantry, this is the menu I came up with:

Roasted chicken
mashed potatoes

Dinner at Mom's

Chicken salad sandwiches on foccia bread (using leftover chicken from Monday)
fresh garden salad with sliced grapes, Mandarin oranges and walnuts

Shredded BBQ Salmon sandwiches (Okay, I'm winging this one. I have a lot of cans of Salmon)
chopped veggie salad

Brats/Sauerkraut/new potatoes/apples skillet
herbed pasta

Mozzarella Stuffed Grilled Burgers
Fresh garden salad
Sauteed green beans
Cold Pasta Salad

Some kind of homemade soup
eat up leftovers

  3. We make chicken so often and yet we seldom make chicken salad from the leftovers. Can you share the recipe you use for chicken salad?

  4. Becca, it's nice to make up a bowl of chicken salad and just have it handy in the fridge. I love it in this warm weather, it just hits the spot!

    Audrey, I actually don't have a recipe. I add whatever sounds good at the moment. However, my basic recipe is half mayo & half Miracle Whip and then whatever I add to it. I have made it with Ranch dressing or I have used the dry packet of a Mexican Dip to give it a tangy flavor. I will add chopped celery, chopped onions, chopped grapes, chopped walnuts, dried cherries, dried cranraisins and I have added chopped apples before as well. It kind of turns into a waldorf Salad kind of thing! :)
