Menu Plan Monday

After spending the last week and a half camping, I'm ready for some "fresh" menus. It seems like when we camp, we don't have a lot of fresh items. Not a lot of salads and fruit mainly. I need to work on that. Also, when you are in small little towns that have only one locally owned grocery store, the prices are pretty outrageous for fresh produce.

After talking to a woman who was picking up a few things while I was muttering about the prices of cucumbers, I asked her how she deals with such high prices. She told me she makes a list of things she needs and once a week, she drives to the nearest "big city" to stock up for the week. The next "big city" in that area was 38 miles away, so it wasn't feasible for me to head over there for a couple of fresh veggies for a salad. So, lesson learned.
