Sugar Free Banana Muffin Recipe

I have been trying to come up with some sugar-free and healthier sweet treats. I also have several boxes of dry baby cereal that I want to incorporate into recipes. These cereals are fortified with vitamins and the grains are a great source of fiber.

I stopped at the fruit market the other day and they had all their bruised bananas bagged up for .59 cents a bag. So, banana muffins it is! These muffins came out so moist and tasty!

So, this turned out to be a yummy, healthy and thrifty recipe!

Here is the recipe. I also included how to make it with sugar and no baby cereal.

Sugar-free Banana Muffins (makes 12 muffins)

(Sugar-free/baby cereal banana muffins)


4 Large bananas, mashed

1/2 cup Splenda (or 1/2 CUP OF SUGAR)

1 slightly beaten egg

1/3 cup melted margarine or butter

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

3/4 cup of dry baby cereal (I used oatmeal)

3/4 cup of flour

(you could just use 1 1/2 cup of flour if you want)

Mix the mashed banana, sugar, egg and butter together. Set aside. In a separate bowl, mix together baking soda, baking powder, salt and flour. Mix wet and dry ingredients all together, being careful not to over-stir! Pour into greased muffin tins, and bake in 350 degrees oven for approximately 20 minutes. Enjoy

    I have been using the dry baby cereal in a few ways lately. I just thought since I have it and it is so filled with good things, why not. LOL The rice cereal is a great thickener for gravies by the way!
