A Inexpensive Cooking Staple

This is just a simple base to keep on hand for any type of cream sauce or white sauce. I have heard it called "Magic Mix" and just plain old "Cream Sauce Mix". Whatever you call it, it is a very nice mix to keep on hand.

2 & 1/3 cups of Powdered Milk
1 cup All Purpose Flour
1 Cup (2 sticks) of butter or margarine (no spreads) - room temperature

Combine ingredients in a mixer. Start off slow, otherwise this stuff will fly all over the place!). You want to look like corn meal. Store in an airtight container in the fridge.

The make up for use:
2/3 cup of mix
1 cup of water.

Combine in saucepan, stir rapidly (whisking is best I have found) over medium heat until it starts to bubble. Add in what ever other ingredients you want to complete your dish.

A couple of my favorites:

Alfredo Sauce:
make up the cream sauce mix (mix & water) add Parmesan cheese, and any other white cheese you have.
some garlic powder
if you want it even creamier, add some canned milk and about a 1/4 of a brick of cream cheese.

To make a fantastic tomato cream sauce follow the above recipe for Alfredo and then add a can of crushed tomatoes that you have pureed into the mix.

Need a can of cream of chicken soup? Just use the cream sauce mix and add chicken broth and a pinch of onion powder.

Country gravy:
made up cream sauce mix
browned crumbled up sausage
a little bit of the sausage grease
black pepper & salt to taste

See, super duper easy. cheap and a major time saver!

    I first tried it about 100 years ago (LOL) because I didn't have any fresh or even canned milk. I had called my grandma and told her I was in the middle of making dinner and what would she do (I was making country fried steak for dinner). And she is the one who told me how to make this.
    The Alfredo sauce is something I just played with and came up with it and love!

  4. Liz, you're welcome! Using the powdered milk is so nice because it lasts so much longer and you can make it ahead of time and keep it on hand. Can you tell, I'm all about the fast and easy way of doing things? LOL
